Our facility is the only one of its kind in New Mexico. Here we put
the nuts on trays and put them into a "batch" roaster to pre-heat. After only a few minutes,
the men remove the trays from the oven and dump the pistachios into
a rotating drum called a sprayer. High pressure nozzles inside the
drum disperse a fine mist of salt water over the nuts as they roll and
tumble into the waiting trays, and are returned to the oven to have
the coating "roasted" onto the nut. Using a batch roaster is labor
intensive, but it also gives the most flavorful, even roasting of the pistachios. |
